Bill's Belfast Irish Soda Bread Served at one of the Board Breakfasts. An essential part of any Ulster Fry 3 cups flour 2 tsp sugar 1 tsp salt 1 tsp baking soda 1 tsp cream of tartar 1 1/2 to 2 cups buttermilk Blend dry ingredients. Add buttermilk. It makes a very wet, sticky dough. Turn out onto a well-floured surface and knead 8-10 times. Divide in half. Roll out half the dough into a 9" circle. It should be about 3/4" thick. Cut into quarters (a pizza-cutting wheel does a great job). Transfer to a medium hot, dry frying pan (an electric griddle set at 350oF works well.) Bake for 5 minutes on each side or until light golden brown. Flip up onto the cut edges to cook them (3 minutes per edge). Cool for 5 minutes. Cook second half of dough the same way. Split the way you would an English Muffin. Serve hot with butter and jam. Or, after splitting them, toss into the frying pan after cooking your breakfast bacon. You only need to fry up the split side.
